Create a luxurious apple and fig tart for a delicious taste of fall.
Ingredients:
  • 300g plain flour
  • 60g caster sugar
  • 150g butter, chopped
  • 40.00 gm iced water
  • 3 Granny Smith apples, core removed
  • 40.00 gm caster sugar, extra
  • 1 fig, quartered into wedges
  • 20.00 gm almond meal
  • Extra fig slices, to decorate (optional)
  • 21.60 gm honey, plus extra to drizzle
  • Reduced fat thickened cream, to serve
Instructions:
  • Combine flour, caster sugar, and butter in a food processor until you have a coarse crumb texture. Add water and process until the dough just starts to come together. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  • 1. Preheat the oven to 180°C. Roll out the dough on non-stick baking paper or a lightly floured surface to a thickness of 5mm. Line a 20cm fluted flan tin with a removable base with the pastry. Trim the edges, prick the base with a fork, and line with non-stick baking paper. Fill with rice or baking beans. Bake for 10 minutes. Remove the paper and rice, then bake for an additional 8 minutes. If the base puffs up slightly, gently push it down with the end of a wooden spoon.
  • Slice the apples thinly and mix with the additional caster sugar. Cut each fig quarter lengthwise into three thin wedges.
  • Spread almond meal evenly over the pastry base. Layer the apple slices in a spiral pattern, creating two layers and filling the middle with smaller pieces. Place figs evenly over the top layer, tucking them between the apples. Add extra fig slices to the middle if desired. Drizzle honey over the apples and figs. Bake for 30 minutes. Drizzle with more honey and brush over the fruit. Allow to cool slightly before serving with cream.
