Sticky Japanese salmon tray bake with mirin recipe

Quick and delicious Japanese-inspired salmon tray bake with sweet potatoes, tomatoes, broccolini, and a flavorful maple syrup, soy sauce, mirin dressing. Ideal for busy evenings!
Ingredients:
  • 500g small sweet potatoes, cut into wedges
  • 40.00 ml mirin
  • 54.00 gm maple syrup
  • 42.00 gm soy sauce
  • 21.00 gm fresh lime juice
  • 4 Salmon Skin off Fillets
  • 1 bunch asparagus, trimmed, halved lengthways if thick
  • 1 bunch broccolini, trimmed
  • 200g punnet grape tomatoes
  • 6.00 gm sesame seeds, toasted
  • Steamed white rice, to serve
Instructions:
  • Preheat oven to 200C/180C fan forced. Line a large baking tray with baking paper and arrange the sweet potato wedges on it. Lightly coat with oil spray and bake for 30 minutes or until tender.
  • In a small saucepan over medium heat, mix the mirin, maple syrup, and soy sauce. Boil and simmer for 3-5 minutes until reduced by half. Transfer to a heatproof bowl and let it cool slightly while stirring occasionally. Then, mix in the lime juice.
  • Arrange the sweet potato around the edges of the tray and place the salmon in the center. Drizzle one-third of the mirin mixture over the salmon, then surround it with the asparagus, broccolini, and tomatoes.
  • During the 15 minutes of baking, remember to lavish the salmon with the remaining mirin mixture every 5 minutes. Once done, generously sprinkle with toasted sesame seeds before serving alongside some fluffy rice.
