Sticky mandarin loaves

Moist mandarin loaves drizzled with sticky citrus syrup.
Ingredients:
  • 125g butter, softened
  • 215g caster sugar
  • 3 eggs
  • 20.00 ml finely grated mandarin rind
  • 55g almond meal
  • 115g plain flour
  • 2.00 gm baking powder
  • 60g yoghurt
  • 100g caster sugar
  • 60ml lemon juice
  • 60ml mandarin juice
  • White sugar, to sprinkle
  • Shredded mandarin peel, to decorate
Instructions:
  • Preheat your oven to 160°C. Grease twelve 1/2 cup (125ml) loaf or friand pans and place them on an oven tray.
  • In a bowl, use an electric mixer to cream together the butter and sugar until pale and creamy. Add eggs one at a time, beating well after each addition. Mix in mandarin zest, almond meal, flour, baking powder, and yogurt until combined. Divide the batter among pans, smooth the tops, and bake for 15 minutes until a skewer comes out clean. Cool on a wire rack before serving.
  • In a saucepan over low heat, combine the extra sugar, lemon juice, and mandarin juice. Stir and cook for about 5 minutes until the sugar dissolves. Increase the heat to high and bring to a boil. Let it cook for 2-3 minutes, or until the syrup thickens. Take it off the heat and let it cool slightly. Pour the mixture evenly over each cake and let it cool a bit. Serve topped with sugar and peel.
