Delightful coconut chia puddings topped with sticky mandarins and strawberries for a impressive treat!
Ingredients:
  • 70g chia seeds
  • 400ml can light coconut milk
  • 60ml syrup
  • 2 mandarins, peeled, segmented
  • 250g strawberries, quartered
Instructions:
  • In a medium bowl, mix chia seeds, coconut milk, and 2 tablespoons of agave syrup or maple syrup. Cover the bowl with plastic wrap and refrigerate for 6 hours or until thickened.
  • In a bowl, toss mandarin and strawberry together. Pour in the rest of the agave syrup or maple syrup and mix well. Let it sit for 30 minutes, allowing the strawberries to release their juices.
  • Divide the chia mixture into individual serving bowls or glasses and layer with the strawberry mixture on top.
