Elevate boxed cake mix with simple additions for impressive flavor.
Ingredients:
  • 2 x 200g packets Tim Tams
  • 400g packet chocolate cake mix with icing
  • 395g can sweetened condensed milk
  • 97.50 gm Shredded Coconut
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line with baking paper, leaving a 2cm overhang on all sides.
  • In a food processor, pulse the biscuits until finely chopped and close to forming a paste. Press the mixture onto the base of the pan. Chill in the refrigerator for 10 minutes. Bake until lightly firm to the touch, about 10 minutes.
  • Using an electric mixer, combine cake mix, condensed milk, egg, and 1/2 cup of shredded coconut until smooth. Spread mixture evenly over the prepared base and bake for 25-30 minutes, or until a skewer inserted into the center comes out with moist crumbs and the top is firm to the touch.
  • Mix the icing sachet with 2 tablespoons of hot water until smooth. Pour over the hot slice, spreading it evenly with a spatula. Sprinkle the remaining shredded coconut on top and let it cool completely before cutting into 18 pieces. Serve and enjoy!
