5-ingredient coconut mango ice-cream

Whip up a luscious tropical ice cream with frozen mango pieces.
Ingredients:
  • 750g frozen chopped mango
  • 400ml can coconut cream
  • 395g can sweetened condensed milk
  • 600ml thickened cream
  • 8.80 gm toasted coconut flakes, to sprinkle
Instructions:
  • Combine ripe mango and luscious coconut cream in a food processor. Blend until velvety and well mixed.
  • Beat condensed milk and thickened cream with an electric mixer until soft peaks form. Gently fold in mango mixture. Transfer the delightful mixture into a 9cm-deep, 11.5cm x 20cm metal loaf pan. Sprinkle with coconut flakes for extra flair. Freeze for at least 6 hours or overnight for the perfect frozen treat.
  • Thaw at room temperature for 10 minutes before serving.
