"Easy and affordable spicy mint chicken wings recipe that's irresistibly delicious!"
Ingredients:
  • 131.25 gm soy sauce
  • 24.40 gm fish sauce
  • 40.00 ml grated palm sugar
  • 2 stalks lemongrass (white part only), finely chopped
  • 131.26 gm lime juice
  • 1.5kg chicken nibbles (see note)
  • 2 small red chillies, sliced
  • 250.00 ml firmly packed fresh mint leaves
  • 1 small red chilli, roughly chopped
  • 20.00 ml rice vinegar
  • 10.00 gm caster sugar
  • 1.20 gm salt
Instructions:
  • Mix together soy sauce, fish sauce, palm sugar, garlic, lemongrass, and lime juice in a pitcher. Put chicken nibbles in a ceramic baking dish in a single layer. Pour sauce over chicken and coat evenly. Cover and refrigerate for 6 hours or overnight, occasionally turning chicken in the marinade.
  • Preheat the oven to 200C/180C fan-forced. Let the chicken sit at room temperature for 15 minutes after removing it from the fridge.
  • Roast the chicken in the flavorful marinade for 35 minutes, ensuring to turn it twice, until golden brown and fully cooked.
  • To prepare the Spicy Mint Sauce, simply combine all the ingredients in a small food processor or blender until smooth. Then season the chicken with chili and serve with the flavorful mint sauce.
