Sticky Vietnamese salmon recipe

Quick and easy sticky salmon fillets ready in 20 mins. Sweet and salty brown sugar sauce creates a golden crust on the salmon. Budget-friendly at $5.50 per serving.
Ingredients:
  • 18.40 gm vegetable oil
  • 4 (about 180g each) skinless salmon fillets
  • 4cm-piece fresh ginger, peeled, cut into matchsticks
  • 2 garlic cloves, thinly sliced lengthways
  • 1 long fresh red chilli, halved lengthways
  • 100g (1/2 cup, firmly packed) brown sugar
  • 60ml (1/4 cup) fish sauce
  • 21.00 gm fresh lime juice
  • 1 bunch baby pak choy, halved lengthways
  • 1 green shallot, thinly sliced diagonally
  • Steamed jasmine rice, to serve
  • Lime cheeks, to serve
Instructions:
  • Heat oil in a non-stick frying pan over medium-high heat. Sear salmon, top-side down, for 2 minutes until golden. Plate and serve.
  • Sauté ginger, garlic, and chili in the pan until fragrant. Stir in sugar, fish sauce, and lime juice until sugar dissolves. Place the salmon back in the pan, cover, and cook on low heat for 2 minutes.
  • - Add the pak choy and cook covered until bright green and salmon flakes easily. Uncover, then simmer until sauce slightly thickens. Serve in bowls, topped with shallot, with rice and lime cheeks on the side.
