Create a budget-friendly family meal: Stir-fried tofu & broccoli in soy sauce served over brown rice for under $10.
Ingredients:
  • 35g (1/4 cup) cornflour
  • 350g firm tofu, cut into pieces
  • 27.60 gm vegetable oil
  • 40.00 ml dry sherry
  • 42.00 gm soy sauce
  • 2.50 gm cornflour, extra
  • 1 brown onion, cut into thin wedges
  • 400g broccoli, trimmed, cut into florets
  • 1 long fresh red chilli, halved, deseeded, finely chopped
  • 2 x pkt Uncle Ben's® Microwave Brown Rice, heated following packet instructions, to serve
Instructions:
  • In a medium bowl, mix the cornflour and salt together. Add the tofu and coat evenly. Remove any excess coating by shaking gently.
  • Preheat a wok or large non-stick frying pan over high heat. Add 1 tablespoon of oil, letting it heat until it shimmers. Cook one half of the tofu for 1 minute on each side until golden, then transfer to a plate. Repeat with the remaining tofu.
  • Combine the sherry, soy sauce, sugar, and extra cornflour in a small bowl, stirring until the sugar dissolves and the mixture is smooth.
  • In the wok over high heat, sizzle the onion in the remaining oil until fragrant. Toss in the broccoli and chili, stir-frying until vibrant and crisp-tender. Introduce the tofu and sherry mix, stirring until the tofu is warmed through.
  • Scoop rice and stir-fry into individual serving bowls.
