Satisfying vegetarian stir-fry with a savory-sweet twist from tamari and honey.
Ingredients:
  • 40.00 ml dry sherry
  • 20.00 ml tamari (wheat-free soy sauce)
  • 14.40 gm honey
  • Olive oil spray
  • 60g walnuts
  • 1 red onion, halved, cut into thin wedges
  • 2 garlic cloves, thinly sliced
  • 2 long fresh red chillies, seeded, thinly sliced
  • 250g broccoli, trimmed, cut into florets
  • 2 bunches asparagus, woody ends trimmed, cut into 4cm lengths
  • 40.00 gm water
  • 200g firm tofu, cut into 1cm-thick slices
  • 400.00 gm steamed brown rice, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Combine sherry, tamari, and honey in a small bowl and mix well.
  • Preheat a wok over high heat and spritz with oil. Sauté the walnuts until golden, about 1-2 minutes. Remove to a bowl.
  • Coat the wok with oil, then sauté the onion for 2 minutes until slightly softened. Follow by adding the garlic and chili, and sauté for 1 minute until fragrant. Toss in the broccoli and asparagus, splash with water, and stir-fry for 2-3 minutes. Finally, mix in the sherry, walnuts, and tofu, and stir-fry for 1-2 minutes until the veggies are vibrant and crisp-tender.
  • Portion out the brown rice into individual serving bowls. Spoon the delicious stir-fry over the rice and garnish with fresh coriander leaves.
