Savory tofu burgers with onion, celery, and melted Cheddar cheese, a delicious twist on classic burgers.
Ingredients:
  • 1 (12 ounce) package firm tofu, frozen for 72 hours
  • 2 teaspoons vegetable oil
  • 1 stalk celery, chopped
  • 0.25 cup shredded Cheddar cheese
  • 1 large egg, beaten
  • 0.5 cup vegetable oil for frying, or as needed
Instructions:
  • Simmer a large saucepan of water. Leave the frozen tofu in its package and immerse it in the hot water. Allow the tofu to thaw for around 20 minutes off the heat.
  • Remove the tofu from the package and place on a plate. Cover with another plate and weigh down with a 3- to 5-pound weight. Press the tofu for 20 to 30 minutes, then discard the liquid.
  • As the tofu drains, warm 2 teaspoons of oil in a small skillet over medium heat. Cook the onion and celery until tender and slightly golden, approximately 5 minutes. Take the skillet off the heat.
  • Finely chop the tofu and transfer it to a mixing bowl along with the onion and celery mixture, Cheddar, egg, salt, and pepper. Mix everything together until fully combined.
  • In a large skillet, heat 1/4 inch of oil over medium-high heat. Divide the tofu mixture into six equal portions and gently shape them into patties. Fry until golden brown on each side, about 5 to 7 minutes.
