Exciting Asian-inspired satay tofu burgers will tantalize your taste buds.
Ingredients:
  • 60ml soy sauce
  • 60ml honey
  • 20.00 ml finely grated fresh ginger
  • 200g pkt firm tofu, thickly sliced crossways into 4 pieces
  • 4 white bread rolls, or wholemeal bread rolls, split
  • 4 medium portabella mushrooms, trimmed
  • 1 bunch bok choy, leaves shredded
  • 2 spring onions, sliced thinly
  • 95g peanut butter
  • 22.00 gm sweet chilli sauce
Instructions:
  • Mix together the soy sauce, honey, and ginger in a shallow bowl. Add the tofu and ensure it is well coated. Refrigerate for 20 minutes to let the flavors meld.
  • Preheat a large chargrill pan or barbecue and lightly oil it. Toast the bread rolls until golden. Set aside. Drain marinade from tofu and cook tofu and mushrooms for 2 1/2 minutes per side until golden and heated. Transfer to a plate.
  • In a small saucepan over medium heat, mix together the peanut butter, sweet chilli sauce, and 1/3 cup (80ml) of water. Stir constantly for 3 minutes until well combined and heated through to create the satay sauce.
  • Place the bread roll bases on serving plates and layer with mushrooms, tofu, satay sauce, bok choy, spring onion, and bread roll tops. Serve with additional satay sauce on the side.
