Satisfy your cravings with this tasty vegan tofu satay paired with rich peanut sauce, a twist on the traditional Asian favorite.
Ingredients:
  • 0.75 cup coconut milk
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon curry paste
  • 1.5 teaspoons ground turmeric
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon vegan fish sauce substitute
  • 2 (8 ounce) containers extra-firm tofu, pressed and drained
  • 4 (8-inch) bamboo skewers
  • 3 tablespoons creamy natural peanut butter
  • 3 tablespoons coconut milk
  • 3 tablespoons chili-garlic sauce
  • 2.5 tablespoons lime juice
  • 1 teaspoon freshly grated ginger
  • 4 lime wedges
Instructions:
  • Combine coconut milk, kecap manis, curry paste, turmeric powder, ginger, and vegan fish sauce in a gallon-sized resealable bag. Seal the bag and mix by shaking well.
  • Cut tofu into 2-inch pieces and gently place them in a bag. Seal the bag and shake to evenly coat the tofu. Marinate for at least 30 minutes. Meanwhile, soak bamboo skewers in water for 30 minutes.
  • In a bowl, blend together peanut butter, coconut milk, chili-garlic sauce, kecap manis, lime juice, and ginger until smooth. Set aside.
  • Get the outdoor grill ready by preheating it to medium heat and giving the grate a light coating of oil.
  • Pat the tofu pieces dry to remove excess marinade and skewer an equal number of tofu pieces onto each skewer.
  • Grill the skewers, turning once and brushing with the marinade, until golden brown, for 10 to 15 minutes.
  • Serve the skewers with a generous drizzle of peanut sauce alongside extra sauce and lime wedges.
