Succulent chargrilled tofu and capsicum burger with flavorful babaganoush - a crowd pleaser for all!
Ingredients:
  • 350g pkt firm tofu
  • 18.20 gm olive oil
  • 1 garlic clove, crushed
  • 5.00 gm ground cumin
  • Salt & freshly ground black pepper
  • 1 40cm loaf Turkish bread
  • 200g container babaganoush
  • 1 bunch rocket, stems removed, washed, dried
  • 125g roasted red capsicum, cut into strips
Instructions:
  • Slice the tofu into four evenly sized pieces, then lay them on a plate lined with paper towel and delicately pat the tops to remove excess moisture using more paper towel.
  • In a small bowl, mix together oil, garlic, and cumin. Season with salt and pepper. Place tofu slices on a plate and generously coat both sides with the fragrant oil mixture, using your fingers to rub it in evenly.
  • Slice the Turkish bread with a serrated knife into 4 equal portions. Then, horizontally cut each portion in half.
  • Preheat a chargrill or barbecue grill over medium heat. Grill the tofu slices for 2-3 minutes on each side until they are golden and heated through.
  • Toast the bread on the chargrill or barbecue grill until both sides are golden and crisp. Alternatively, toast under a preheated grill.
  • Generously smear bread slices with flavorful babaganoush. Arrange bread bases on plates and layer with rocket leaves, a slice of tofu, and strips of red capsicum. Top with the remaining slices of bread to create a delicious sandwich. Serve promptly.
