Tofu tacos

Flavorful vegan tacos with tofu and chargrilled corn tortillas - ideal for hosting gatherings.
Ingredients:
  • 250g firm tofu, cut into 5mm slices
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp chilli flakes
  • 6 corn tortillas
  • 60g rocket leaves
  • 82.50 ml coriander leaves
  • 60g chilli
Instructions:
  • In a large frying pan over high heat, heat half of the oil until shimmering. Cook the tofu for about 2 minutes on each side, or until golden brown.
  • Pour the remaining oil into the pan. Sauté the onion for 3 minutes or until soft. Mix in the cumin, coriander, and chili and cook for 1 minute or until fragrant. Pour in the tomato and bring to a simmer. Lower the heat to medium and simmer, stirring occasionally, for 5 minutes or until the sauce slightly thickens. Gently add the tofu and coat it in the sauce.
  • 1. Char the tortillas on a chargrill pan until both sides are nicely charred. 2. Arrange the tortillas on plates and layer with fresh rocket, flavorful tofu mix, fragrant coriander, and spicy jalapeños, if desired. 3. Garnish with lime wedges before serving.
