Savory tofu dish with optional blue cheese for a delightful twist.
Ingredients:
  • 1 cup uncooked long grain white rice
  • 2 cups water
  • 0.5 cup chopped walnuts
  • 1 tablespoon butter
  • 1 large red onion, sliced, separated into rings
  • 1 cup vegetable broth
  • 0.5 teaspoon dried sage
  • 0.5 teaspoon dried tarragon
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 (14 ounce) package firm tofu, drained and cut into 1/2 inch strips
  • 1 cup crumbled blue cheese
Instructions:
  • In a pot, bring the rice and water to a boil. Once boiling, cover the pot, lower the heat to low, and simmer for 20 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Spread the walnuts on a baking dish and bake for 10 minutes, stirring occasionally, until they are lightly toasted. Take them out of the oven.
  • In a skillet over medium heat, melt the butter and sauté the onion until tender. Add garlic and cook for 1 minute. Incorporate the broth and season with sage, tarragon, salt, and pepper. Simmer for 10 minutes, stirring frequently.
  • In a separate skillet, warm up the oil. Coat the tofu with the toasted walnuts and cook each side for about 4 minutes until golden. Combine any leftover walnuts with the onion and broth mixture in the skillet. Heat everything through. Serve over rice and sprinkle with blue cheese before serving.
