Enjoy a quick and creamy pesto chicken stir-fry, perfect for the whole family in just 20 minutes!
Ingredients:
  • 36.40 gm olive oil
  • 4 small skinless chicken breast fillets (about 160g each), thinly sliced
  • 1 red capsicum, cut into thin strips
  • 225g Swiss brown mushrooms, sliced
  • 200g baby spinach leaves
  • 1 punnet cherry tomatoes, halved
  • 150ml thin cream
  • 40.00 gm basil pesto
  • Small basil leaves, to garnish
  • Steamed brown rice, to serve
Instructions:
  • In a large non-stick pan over high heat, heat 1 tablespoon of oil. Cook chicken until golden and cooked through, about 5-6 minutes. Remove and set aside.
  • Pour the rest of the oil into the pan with the capsicum and mushrooms and stir-fry for 1-2 minutes. Toss in the spinach and tomato and cook until the spinach wilts slightly. Mix cream and pesto in a small bowl, pour into the pan, and heat through. Garnish with fresh basil and serve alongside rice.
