Stirred custard with orange and vanilla poached pears

Elevate dessert with orange-vanilla poached pears served with luscious homemade custard.
Ingredients:
  • 1 vanilla bean, halved lengthways
  • 257.50 gm milk
  • 126.25 gm pure cream
  • 70.95 gm caster sugar
  • 4 egg yolks
  • 500g caster sugar
  • 1 vanilla bean
  • 3 x 5cm-long strips orange rind
  • 1 cinnamon stick
  • 4 firm pears (such as packham), peeled
Instructions:
  • Scrape the seeds from the center of each vanilla bean half. Combine the milk, cream, vanilla seeds, and bean halves in a saucepan. Heat over medium heat, stirring occasionally, until it comes to a boil.
  • Pour the milk mixture through a sieve into a large jug, removing and discarding the vanilla bean halves.
  • In a large bowl, vigorously whisk together sugar and egg yolks until they form a thick and creamy mixture. Slowly incorporate the hot milk mixture into the bowl while whisking continuously.
  • Put the custard mixture back into the pan and cook over low heat. Stir with a wooden spoon for about 7 minutes until the mixture thickens enough to coat the back of the spoon.
  • Strain the mixture into a bowl. Fill a larger bowl one-third full with ice and cold water. Set the bowl of custard in the ice water bath. Stir occasionally for 10 minutes, or until the mixture cools and prevents the custard from cooking too much or splitting upon cooling.
  • Cover the surface of the custard with plastic wrap to keep it smooth and prevent a skin from forming. Chill in the refrigerator until cold as per instructions.
  • Prepare a fragrant poaching liquid by heating 4 cups of cold water with sugar, vanilla bean, orange rind, and cinnamon in a saucepan over medium heat. Gently add the pears and simmer for about 20 minutes until just tender. Let the pears cool in the syrup, then carefully transfer them to serving bowls. Serve the poached pears on a bed of custard for a truly delightful dessert.
