Luscious Potato Soup

Creamy potato soup with a luxurious touch of creme fraiche stirred in at the end.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 shallots, finely chopped
  • 3 green onions, finely chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 cloves garlic, minced
  • 1 teaspoon herbes de Provence
  • 2 pounds potatoes, peeled and diced
  • 4 cups vegetable broth
  • 0.5 cup creme fraiche
Instructions:
  • In a large, heavy-bottomed pot over medium-high heat, warm olive oil and butter. Saute onion, shallots, green onions, salt, and pepper until softened and starting to brown, for 4 to 6 minutes. Stir in garlic and herbes de Provence; cook until garlic is fragrant, for about 30 seconds. Be careful not to overcook the garlic as it can become bitter.
  • Mix potatoes into the seasoned onion mixture until well coated. Pour in vegetable broth and milk, stirring to combine. Cover the pot and bring to a boil. Simmer on low heat until potatoes are tender and easily mashed with a spoon, about 10-12 minutes.
  • Mash the potato chunks with a potato masher or the back of a wooden spoon until the soup becomes relatively smooth and the larger chunks are broken up.
  • Stir in creme fraiche and adjust seasoning with salt and black pepper to enhance the flavor of the soup.
