Strawberries & cream cheesecake

Elevate your cheesecake with decadent chocolate-covered strawberries.
Ingredients:
  • 250g Nice biscuits
  • 125g butter, melted
  • 500g cream cheese, coarsely chopped
  • 300g ctn sour cream
  • 155g (3/4 cup) caster sugar
  • 250g punnet strawberries, hulled, washed, coarsely chopped
  • 3 eggs
  • 600ml ctn thickened cream
Instructions:
  • 1. Preheat your oven to 160ºC. 2. Pulse the biscuits in a food processor until they form fine crumbs. 3. Blend in the butter until fully combined. 4. Press the mixture onto the base and three-quarters up the sides of a 22cm springform pan. 5. Chill in the fridge for 30 minutes to firm up.
  • In a clean food processor, blend cream cheese, sour cream, sugar, and strawberries until smooth, about 2 minutes. Then add eggs and blend until fully combined.
  • - Set a pan on a baking tray. - Pour in the cream cheese mixture. - Bake for 55-60 minutes until the center is just set. - Let the cheesecake cool with the oven door slightly open for 2 hours to prevent cracking. - Refrigerate overnight to set completely.
  • Beat the cream in a bowl with an electric beater until soft peaks form. Remove the cheesecake from the pan and top with the whipped cream.
