Strawberries and cream chocolate celebration cake recipe

Skip baking, decorate a strawberries and cream chocolate cake effortlessly.
Ingredients:
  • 2 x 350g Chocolate Cakes
  • 125g (1/2 cup) mascarpone cheese
  • 125ml (1/2 cup) thickened cream
  • 500g punnet fresh strawberries
  • 125g salted butter, softened
  • 300g (2 cups) icing sugar
  • 180g block white chocolate
  • 50g milk chocolate
Instructions:
  • Unwrap cakes and transfer one to a serving platter to thaw slightly.
  • In the bowl of an electric mixer with a whisk attachment, combine mascarpone and cream and whip until soft peaks form. Thinly slice enough strawberries to cover a cake layer. Save the rest of the whole strawberries for later. Spread a layer of mascarpone mixture over the sliced strawberries. Place the second cake on top, icing side-down, and chill in the refrigerator for 30 minutes.
  • 1. In the bowl of an electric mixer, combine butter and icing sugar and whip until pale and creamy. 2. Spread a third of the icing over the cake to create a thin 'buttercream crumb' layer. Chill in the fridge for 10-15 minutes to set slightly. 3. Spread the remaining icing over the cake and refrigerate until ready to serve.
  • Put white chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring with a metal spoon until smooth. Let it cool. Repeat with milk chocolate. Line a baking tray with foil. Dip half of the strawberries in white chocolate, tapping off excess. Place on tray and chill for 20 minutes. Drizzle milk chocolate over the strawberries with a fork. Chill until set.
  • Garnish cake with chocolate-dipped strawberries and fresh berries. Enjoy!
