Strawberry and Cointreau vacherin

Ingredients:
  • 2 egg whites
  • 215.00 gm caster sugar
  • 4.40 gm vanilla extract
  • 1 tsp white vinegar
  • 5.00 gm cornflour
  • 500g strawberry
  • 300ml thickened cream
  • 24.00 gm icing sugar
  • 515.00 gm milk
  • 300ml cream
  • 4 egg yolks
  • 1 vanilla bean, split lengthways
  • 50ml Cointreau
Instructions:
  • For the Cointreau ice-cream, combine milk, cream, caster sugar, egg yolks, vanilla bean, and seeds in a large, heavy-based pan. Whisk thoroughly. Heat the mixture over low heat, stirring continuously until a custard forms. Allow it to cool, then mix in Cointreau. Pour into an ice-cream machine and churn following the manufacturer's guidelines.
  • Pour the custard into a shallow baking tin, cover, and freeze for 2-3 hours until firm. Transfer the frozen custard into a food processor and blend until thick and smooth. Return the mixture to the baking tin and freeze again. Repeat this process 1-2 more times until you achieve a smooth ice-cream consistency. Keep in the freezer until ready to serve.
  • 1. Preheat your oven to 120°C and line a baking tray with parchment paper. 2. In a bowl, use an egg beater or electric hand beater to whip egg whites with a pinch of salt until soft peaks form. 3. Gradually add caster sugar, one tablespoon at a time, beating well after each addition until the mixture is thick and glossy. 4. Mix in vanilla, vinegar, and cornflour until just combined. 5. Transfer the meringue mixture into a piping bag fitted with a 1cm plain nozzle. 6. Pipe strips of meringue onto the lined tray. 7. Bake for 1 hour and 15 minutes until the meringues are crisp and dry. 8. Leave to cool inside the slightly opened oven. 9. Break or cut the meringue into your desired lengths. 10. Store in an airtight container until serving.
  • Add half of the strawberries to a food processor and blend until smooth. Whisk the cream with 1 tablespoon of icing sugar. Divide the ice cream among 4 glasses. Layer with sliced strawberries, pureed strawberries, and whipped cream. Sprinkle with meringue pieces, dust with the remaining icing sugar, and enjoy.
