Indulgent mini strawberry cream cheese tarts with luscious filling and a decadent strawberry syrup drizzle. Ideal for Valentine's Day or any celebration.
Ingredients:
  • 3 cups white sugar
  • 2 cups frozen strawberries, thawed, with juice
  • 3 sticks unsalted butter, cut into pieces
  • 0.25 cup water, or as needed
  • 2.5 cups powdered sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup whipping cream
  • fresh mint leaves
Instructions:
  • In a heavy pot over medium heat, cook sugar, thawed strawberries, and any strawberry juice, stirring constantly until it comes to a boil. Be vigilant not to caramelize the sugar. Take off the heat and allow to cool to room temperature (15 to 30 minutes). Chill the syrup in the refrigerator for about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease two 24-cup mini muffin tins.
  • In a mixing bowl, blend the butter with the flour until the mixture is crumbly. Add water gradually, 1 tablespoon at a time, until the dough comes together.
  • Roll the dough thinly on a floured surface using a floured rolling pin until nearly see-through. Cut out circles with a large round cookie cutter and gently place them into the muffin cups.
  • Bake in the preheated oven until lightly golden, about 5 to 6 minutes. Allow to cool after removing from the oven.
  • Beat together powdered sugar, cream cheese, and whipping cream until fully combined.
  • Spread the cream cheese filling into each cooled pastry crust, followed by a generous drizzle of strawberry syrup and a beautiful garnish of fresh mint leaves.
