Strawberry Ice Cream Cake

Delicious summer cake - quick and easy to make.
Ingredients:
  • 1 (10 inch tube pan) angel food cake
  • 2 quarts strawberry ice cream, softened
  • 4 cups confectioners' sugar
  • 8 ounces cream cheese
  • 0.5 pint fresh strawberries
Instructions:
  • Slice the Angel Food cake in half horizontally. Smear the softened strawberry ice cream on the bottom layer. Place the top layer over the ice cream and freeze the cake for 45 minutes to an hour.
  • Combine cream cheese and powdered sugar until smooth and airy.
  • 15 minutes before serving, take the cake out of the freezer and generously spread the luscious cream cheese mixture over the top and sides. Decorate with vibrant fresh strawberries for a beautiful final touch.
