Create a stylish outdoor cocktail experience with sparkling fruit cocktails for a delightful evening with friends.
Ingredients:
  • 3 x 250g punnets strawberries, washed, hulled
  • 100g (1/2 cup) caster sugar
  • 125ml (1/2 cup) water
  • 1 x 700ml btl Pimm’s No. 1 Cup
  • 375ml (1 1/2 cups) chilled ginger ale
  • 375ml (1 1/2 cups) chilled sparkling mineral water
  • 1 Lebanese cucumber, trimmed, peeled into ribbons
  • Angostura bitters, to serve
Instructions:
  • Cut half of the strawberries in half. Cook them gently in a saucepan with sugar and water until very soft. Strain the mixture into a bowl, discard the strawberries, and chill in the fridge for 1 hour before serving.
  • In a large serving jug or bowl, mix the strawberry syrup, Pimm’s, ginger ale, mineral water, cucumber, and remaining strawberries together. Add a few drops of bitters to each serving glass, then pour the refreshing Pimm’s mixture on top.
