Indulge in a sweet-tart strawberry rhubarb pie. Pair with vanilla ice cream for a perfect springtime treat.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup all-purpose flour
  • 1 pound rhubarb, cut into 1/4 inch slices
  • 2 pints strawberries, hulled and quartered
  • 1 recipe pastry for a 9 inch double crust pie
  • 2 tablespoons butter
  • 1 large egg yolk
  • 2 tablespoons white sugar
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Combine the flour and sugar in a large mixing bowl.
  • Combine fresh, juicy strawberries and tart chopped rhubarb in a bowl. Sprinkle with sugar and flour, then allow the mixture to sit and develop flavors for 30 minutes.
  • Pour the delicious filling into the pie crust, then add little pats of butter on top. Place the top crust over the filling and seal the edges of the crusts together with some water. Your pie is ready to bake to golden perfection!
  • Use a pastry brush to generously glaze the top of the pie with egg yolk.
  • Dust with a delicate layer of sugar.
  • Make decorative slits in the top crust to help steam release while baking.
  • Bake in the oven until golden brown and bubbling, around 35 to 40 minutes. Allow the pie to cool on a cooling rack.
