Strawberry-Rhubarb Pie Martini

Pink rhubarb and strawberry cocktails, refreshingly sophisticated.
Ingredients:
  • Small lemon wedge
  • Ice cubes or crushed ice
  • 3 cups chopped fresh or frozen rhubarb
  • 1 cup sugar
  • 1 cup water
  • 1/4 cup sugar
  • 1/3 cup strawberry-flavored vodka
  • 2 tablespoons rhubarb syrup
Instructions:
  • Combine rhubarb, 1 cup sugar, and water in a medium saucepan. Bring to a boil, then simmer for 15 minutes until the syrup becomes bright pink, stirring occasionally.
  • Set a strainer over a medium bowl or large glass measuring cup, then strain the hot rhubarb mixture into the bowl. Discard the rhubarb pulp and transfer the syrup into a jar or container. Cover and refrigerate for 1 hour until cold.
  • Sprinkle 1/4 cup of sugar on a small plate. Take a lemon wedge and run it around the rim of a martini glass. Dip the rim of the glass in the sugar, making sure only the outer edge gets coated, then shake off any extra sugar. Put the glass in the freezer.
  • Fill your cocktail shaker with ice, then add the vodka and rhubarb syrup. Shake vigorously for 5 to 6 seconds. Strain the mixture into a chilled martini glass, leaving out the ice.
