Create a unique homemade strawberry ice cream infused with floral rosewater, inspired by Middle Eastern and South Asian flavors.
Ingredients:
  • 1.5 cups fresh strawberries, hulled
  • 0.33333334326744 cup white sugar
  • 3 egg yolks, beaten
  • 0.5 pint milk
  • 0.25 teaspoon salt
  • 1 pint heavy cream
  • 0.25 cup rosewater
Instructions:
  • In a bowl, toss the strawberries with 1/3 cup of sugar and use a potato masher to create a sweet mash. Chill the mixture in the fridge as you move on to the next steps.
  • In a saucepan over medium heat, combine egg yolks, milk, salt, and 1/3 cup sugar. Heat to 175°F (80°C) without boiling. Transfer to a chilled bowl and refrigerate, stirring occasionally until cool. Then mix in cream, rosewater, and strawberries.
  • Transfer the mixture into the ice cream maker and freeze following the manufacturer's guidelines.
