Tossed in honey-thyme vinaigrette, this vibrant salad boasts almonds and strawberries on a bed of mixed greens.
Ingredients:
  • 0.25 cup lemon juice
  • 2 tablespoons honey
  • 1 tablespoon minced shallot
  • 1 teaspoon chopped fresh thyme
  • 0.25 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • 2 tablespoons vegetable oil
  • 1 cup slivered almonds
  • 2 tablespoons white sugar
  • 1 pinch salt
  • 1 (16 ounce) package mixed salad greens
  • 0.5 pint strawberries, quartered
Instructions:
  • Whisk together the lemon juice, honey, shallot, thyme, salt, and red pepper flakes in a bowl, then vigorously whisk in the olive oil and vegetable oil. Set aside.
  • Heat a small skillet over medium-high heat. Combine almonds, sugar, and salt in the skillet. Cook until the sugar caramelizes on the almonds, about 2 to 3 minutes. Remove from heat promptly.
  • In a large bowl, combine salad mix with dressing, ensuring everything is coated. Garnish with almonds and strawberries before serving.
