Deliciously fresh strawberry dessert in a crispy sesame cookie bowl.
Ingredients:
  • For the Strawberry Whip
  • 1 cup diced or roughly chopped fresh strawberries
  • 1/4 cup white sugar
  • 3/4 cup ice cold heavy cream
  • For the Tuile Cookie Cups
  • 1 large egg white
  • Pinch of salt
  • 1/2 teaspoon vanilla extract
  • 3 tablespoon melted butter
  • 1/4 cup all-purpose flour
  • 1 tablespoon black sesame seeds, plus more as needed
Instructions:
  • In a bowl, mix diced strawberries and sugar for the strawberry whip until well combined. Chill in the refrigerator for 2 to 3 hours, stirring occasionally.
  • As the strawberries are soaking in their juices, let's craft the delicate tuile cups. In a bowl, blend flour, sugar, melted butter, egg white, sesame seeds, vanilla extract, and salt until the mixture is velvety smooth, for about 2 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets with silicone baking mats.
  • Drop a generous dollop of batter onto the silicone baking mat, then carefully shape it into a 5 1/2-inch circle. For best results, work with two at a time to mold them while they're still warm.
  • Bake in the oven until the tuile is perfectly golden-brown, around 10 to 12 minutes.
  • While the tuile cookie is still hot, gently place it into a small bowl and press down in the center with a smaller bowl to create a bowl shape. After about 30 seconds, remove the smaller bowl and let the tuile cool completely.
  • Whisk cold heavy cream into the macerated berries until medium-stiff peaks form to complete the whip.
  • Fill the tuile cups with the whipped cream and serve right away.
