Tangy lime enhances sweet strawberry curd for a quick and versatile treat. Perfect on toast or as a luscious dessert topping.
Ingredients:
  • 1 (16 ounce) package fresh strawberries, pureed
  • 0.5 cup white sugar
  • 1 tablespoon cornstarch
  • 1 lime, zested
  • 2 tablespoons fresh squeezed lime juice
  • 0.125 teaspoon salt
  • 0.25 cup butter
  • 4 egg yolks, beaten
Instructions:
  • Combine the strawberry puree, sugar, cornstarch, lime zest, lime juice, and salt in a bowl.
  • In a saucepan over medium-low heat, melt butter. Remove from heat and whisk in strawberry mixture until fully incorporated. Stir in egg yolks, then return to heat.
  • Stir strawberry curd over low heat until it thickens and coats the back of a spoon, about 8 to 10 minutes.
