Elevated boozy poke cake inspired by a classic summer beverage!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 2 tablespoons grated lime peel
  • 1 cup water
  • 2/3 cup light rum
  • 1/3 cup fresh lime juice (from 2 limes)
  • 2 boxes (4-serving size each) strawberry- or strawberry Daiquiri-flavored gelatin
  • 2 1/2 cups from 2 tubs (12 oz) Betty Crocker™ Whipped Vanilla Frosting
  • Strawberries and lime slices, if desired
Instructions:
  • Prepare and bake the cake mix according to the instructions on the box for two 8-inch round pans, incorporating grated lime peel into the batter. Once baked, transfer the cakes to a cooling rack and let them cool completely for approximately 1 hour. Clean and dry the cake pans.
  • Place the cooled cake layers back into the clean 8-inch round pans. Use a thin stirring straw, toothpick, or skewer to poke holes in the cakes at 1/2-inch intervals.
  • Heat 1 cup water in a small saucepan until boiling. Take off the heat and mix in rum, lime juice, and gelatin until fully dissolved. Divide the gelatin mixture evenly over each cake. Chill in the refrigerator for 1 to 3 hours to set the gelatin in the cakes.
  • To effortlessly release the cakes, briefly dip the pans in warm water for 10 seconds. Gently transfer the first cake onto a serving platter and generously spread 1 cup of frosting on top. Carefully layer the second cake on top of the first one on the platter.
  • Spread the remaining frosting over the side and top of the cake. Chill in the refrigerator for 1 hour. Decorate with strawberries and lime. Store any leftover cake in the refrigerator, loosely covered.
