Beautiful Eton mess dessert: Layers of meringue, strawberries, raspberries, and cream in glasses.
Ingredients:
  • 2 cups heavy cream
  • 2 tablespoons white sugar, divided
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries, divided
  • 2 cups sliced fresh strawberries, divided
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon rose water
  • 8 small plain meringue cookies
Instructions:
  • In a chilled glass or metal bowl, whip cream with an electric mixer until frothy. Gradually add 1 tablespoon sugar and vanilla extract while continuing to beat until stiff peaks form. Chill in the refrigerator.
  • Mix together half of the raspberries, half of the strawberries, the remaining tablespoon of sugar, and balsamic vinegar in a bowl. Use a fork to mash the ingredients and refrigerate until serving time.
  • Combine the creamy mashed fruit with cream in a bowl. Fold in the remaining strawberries, raspberries, and fragrant rose water until well mixed.
  • Break the meringues in the bowl into a mix of small and big chunks to create a pleasing texture.
  • Assemble meringues and cream in elegant bowls or glasses and serve promptly.
