Dutch Stroopwafels: Thin waffle cookies filled with sweet caramel, a popular treat from the Netherlands.
Ingredients:
  • 4 cups all-purpose flour
  • 1.125 cups butter, melted
  • 0.75 cup white sugar
  • 0.25 cup warm milk
  • 1 large egg
  • 2 (.25 ounce) envelopes active dry yeast
  • cooking spray
  • 1.5 cups molasses
  • 1.3333333730698 cups packed brown sugar
  • 0.33333334326744 cup unsalted butter
  • 1 teaspoon ground cinnamon
Instructions:
  • To begin making the cookies, combine flour, melted butter, sugar, warm milk, egg, and yeast in a large bowl until the dough becomes too stiff to stir. Then, transfer it to a floured surface and knead by hand for a few minutes. Allow the dough to rise for 45 minutes.
  • Prepare the filling by gently warming molasses, brown sugar, butter, and cinnamon in a saucepan over medium heat. Stir until well combined and then remove from heat.
  • Preheat the pizzelle iron as directed by the manufacturer and lightly coat it with cooking spray.
  • To complete the cookies, briefly knead the dough and divide into twelve pieces. Roll each piece into a 2-inch ball. Press each ball into the preheated pizzelle iron and cook for 1 1/2 to 3 minutes until golden brown. Remove from the iron, slice in half horizontally with a serrated knife while warm. Spread filling inside and sandwich the halves. Repeat with remaining dough to make more cookies.
