Indulge in a vibrant green pasta bursting with flavor!
Ingredients:
  • 150g strozzapreti pasta or other short pasta
  • 36.40 gm olive oil
  • 1 zucchini, cut into ribbons using a vegetable peeler
  • 60.00 gm good-quality basil pesto
  • 1/2 small avocado, finely diced
  • Shaved parmesan, to serve
Instructions:
  • Boil the pasta in salted water until al dente, then drain. Rinse the pasta under cold water, drain well, and toss with 1 tablespoon of olive oil in a bowl.
  • In a large frypan over medium-high heat, sizzle the remaining olive oil. Toss in the zucchini and cook for 1-2 minutes until gently wilted, stirring occasionally.
  • Combine the pasta, zucchini, and pesto in a bowl. Season with sea salt and freshly ground black pepper to taste, then gently toss to mix.
  • *Incorporate the creamy avocado with care before transferring to individual plates. Finish with a generous topping of flavorful shaved parmesan and enjoy promptly.*
