Strozzapreti with caramelised onion sauce

Whip up a simple, delicious pasta dish with minimal ingredients.
Ingredients:
4red onions, sliced
2 tsp choppedrosemary leaves, plus extra sprigs to serve
16.00 gm brown sugar
40.00 ml balsamic vinegar
2 x 400g canschopped tomatoes
150g olive
400g strozzapreti pasta (or other medium-length pasta)
Gratedparmesan, to serve
Instructions:
Heat oil in a frypan over low heat. Sauté onion, rosemary, and 1/2 teaspoon salt for 20-25 minutes until lightly caramelised. Add sugar and balsamic, stir for 1 minute until combined. Increase heat to medium, add tomato, season well, and cook for 10 minutes until slightly thickened. Mix in olives, if desired.
Cook the pasta per package directions until just tender. Drain.
Toss the sauce with the cooked pasta until well combined. Divide into bowls and garnish with parmesan and rosemary before serving.
