Whip up a simple, delicious pasta dish with minimal ingredients.
Ingredients:
  • 4 red onions, sliced
  • 2 tsp chopped rosemary leaves, plus extra sprigs to serve
  • 16.00 gm brown sugar
  • 40.00 ml balsamic vinegar
  • 2 x 400g cans chopped tomatoes
  • 150g olive
  • 400g strozzapreti pasta (or other medium-length pasta)
  • Grated parmesan, to serve
Instructions:
  • Heat oil in a frypan over low heat. Sauté onion, rosemary, and 1/2 teaspoon salt for 20-25 minutes until lightly caramelised. Add sugar and balsamic, stir for 1 minute until combined. Increase heat to medium, add tomato, season well, and cook for 10 minutes until slightly thickened. Mix in olives, if desired.
  • Cook the pasta per package directions until just tender. Drain.
  • Toss the sauce with the cooked pasta until well combined. Divide into bowls and garnish with parmesan and rosemary before serving.
