Ingredients:
  • 1 spring onion, finely sliced
  • 100g low-fat ricotta
  • Finely grated zest of 1/2 a lemon
  • 62.50 ml chopped flat-leaf parsley
  • 21.00 gm lemon juice
  • 62.50 ml pine nuts, lightly toasted
  • 400g chicken breast
  • 8 thin slices prosciutto
Instructions:
  • Preheat oven to 180°C.
  • Mix together the spring onion, ricotta, lemon zest and juice, parsley, and pine nuts in a small bowl. Lightly season the mixture, cover, and refrigerate for 10 minutes.
  • Using a sharp knife, carefully make a lengthwise incision along the side and into the center of each chicken breast, ensuring not to cut all the way through.
  • Divide the ricotta mixture evenly among the chicken breasts. Lay 2 slices of prosciutto slightly overlapping on a work surface. Place a stuffed chicken breast on top of the prosciutto, then roll and secure with toothpicks. Repeat with the rest of the chicken and prosciutto.
  • In a hot frying pan, sear chicken for 4 minutes on each side. Then, transfer to a baking tray and bake for 10 minutes until fully cooked.
