Stuffed folded flatbread

Turkish-inspired pide flatbread with bold flavors, perfect for a tasty and versatile meal anytime.
Instructions:
  • Preheat the oven to 200°C. Heat frozen veg in a large non-stick frying pan with 1 tablespoon of olive oil over medium-high heat until super-soft and sweet, stirring regularly, for about 15 minutes. In a bowl, mix flour with a small pinch of sea salt and gradually add 275ml of water, stirring with a fork. Knead the dough on a flour-dusted surface until smooth, then cover and let it rest. While the vegetables are cooking, roughly chop the mint leaves and crush half of the pistachios. Combine the mint, crushed pistachios, half of the feta, and season the vegetable mixture. Divide the dough into 4 pieces and roll each one out to roughly 12cm x 16cm. Fill each piece of dough with a quarter of the vegetable mixture, seal the edges, and transfer to an oiled baking tray. Top with remaining feta, brush with olive oil, and bake for about 20 minutes or until golden and cooked through. Sprinkle with the rest of the mint leaves and pistachios before serving.
