Cheesy onion and tomato stuffed yeast rolls, folded into savory triangles - perfect for dinner or a tasty appetizer.
Ingredients:
  • 0.5 cup butter
  • 0.5 cup finely chopped onion
  • 0.5 cup water
  • 1 (8 ounce) can tomato sauce
  • 4 cups unsifted all-purpose flour (divided)
  • 2 tablespoons white sugar
  • 1.5 teaspoons salt
  • 3 (.25 ounce) packages active dry yeast
  • 1 egg, at room temperature
  • 0.25 teaspoon vegetable oil
  • 0.5 pound sharp Cheddar cheese, shredded
  • 1 teaspoon water
Instructions:
  • In a skillet over medium-low heat, melt butter and sauté the onion until translucent, approximately 5 minutes. Add water and tomato sauce, stir well, and warm the mixture to about 110°F/45°C.
  • In the work bowl of a stand mixer, mix together 1 cup of flour, sugar, salt, and yeast. Add the tomato sauce mixture. Mix on low speed for 2 minutes until a loose spongy dough forms. Next, beat in 1 egg followed by 1 more cup of flour. Increase speed to high and beat for 2 minutes to develop gluten. Stir in the remaining 2 cups of flour. Allow the machine to knead the dough on high speed until smooth and elastic, or knead by hand for about 10 minutes.
  • Gently oil or wipe the dough surface with vegetable oil, cover the mixing bowl with a cloth, and allow the dough to double in size, approximately 2 hours.
  • Flatten the dough, divide it in half, and place one half on a floured surface. Cover the remaining dough with a cloth to keep it moist. Roll out the first half into a 9x12 inch rectangle, then cut it into 12 squares measuring 3 inches each.
  • Prepare a greased baking sheet or lined with parchment paper, then evenly distribute 2 teaspoons of shredded Cheddar cheese in the center of each square of dough. Fold the squares into triangles to enclose the filling, pinching the edges firmly shut. Arrange the filled rolls on the baking sheet, and continue filling the remaining squares. Repeat the process with the second piece of dough to create roughly 24 rolls. Cover the rolls with a cloth and allow them to rise until doubled in size, approximately 1 hour.
  • Preheat your oven to 375 degrees F (190 degrees C). In a bowl, whisk together 1 egg with 1 teaspoon of water, then set aside.
  • Coat each roll with the egg wash and bake in the preheated oven for about 15 minutes, until the tops are golden brown and the cheese is melted.
