Butter-stewed Lima beans and tomatoes, combined with corn for a delectable dish featuring summer vegetables. Can use fresh, frozen, or canned ingredients.
Ingredients:
  • 1 cup butter, divided
  • 2 cups fresh lima beans
  • 0.5 teaspoon salt
  • 4 fresh tomatoes, peeled and chopped
  • 2 teaspoons white sugar
  • 4 ears fresh corn kernels, cut from the cob
Instructions:
  • In a large saucepan over medium heat, melt 1/2 cup of butter until sizzling. Add the lima beans and a sprinkle of salt, cooking until tender for about 20 minutes.
  • In another saucepan, gently cook tomatoes, sugar, and the reserved 1/2 cup butter until tomatoes are tender, approximately 20 minutes.
  • Combine juicy, ripe tomatoes with tender lima beans, then sprinkle in sweet corn kernels. Allow the flavors to meld together as you cook for an additional 10 minutes.
