Tender roast with zesty garlic-lemon flavor. Perfect with crispy potatoes and vegetables for a satisfying meal.
Ingredients:
  • 1 lemon, zested
  • 2 sprigs fresh rosemary, chopped
  • 3 sprigs fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 pinch sea salt and pepper to taste
  • 1 (3 pound) whole chicken
  • 4 whole garlic cloves
Instructions:
  • Preheat your oven to 425°F (220°C). Mix lemon zest, rosemary, thyme, and minced garlic in a small bowl. Stir in olive oil, then season with salt and pepper to taste.
  • Gently loosen the skin from the chicken breast and thighs, then massage the herb mixture under the skin. Halve the zested lemon and stuff half, along with the garlic cloves, into the chicken cavity. Transfer the chicken to a roasting pan and drizzle the remaining lemon juice over the skin.
  • Roast the chicken in the oven until fully cooked and the juices run clear, for about 1 hour and 35 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh reads 180 degrees F (82 degrees C). Let the chicken rest covered with foil in a warm area for 10 minutes before slicing.
