Ingredients:
  • 250ml (1 cup) dry marsala wine
  • 1 vanilla bean, split
  • 2 cinnamon sticks
  • 500g small sugar plums (see Notes)
  • 150.00g caster sugar
  • 5.00 gm arrowroot
  • 2.50 gm cornflour
  • 6.60 gm vanilla extract
  • 250g mascarpone
Instructions:
  • Preheat your oven to 180°C.
  • Combine marsala, vanilla, cinnamon, and sugar plums in a baking dish and generously sprinkle with sugar.
  • After baking for 20 minutes, carefully transfer the plums to a serving dish and pour the flavorful juice into a saucepan for later use.
  • Mix arrowroot with a splash of cold water, stir into the plum juice, and simmer over low heat until thickened. Drizzle over the plums and let it cool.
  • For the mascarpone custard, whisk together eggs, sugar, cornflour, and vanilla in a bowl. Set the bowl over simmering water and beat until thickened.
  • After taking the mixture off the heat, whisk it over a bowl of ice water until it cools. Then, gently mix in the mascarpone and serve with the chilled sugar plums.
