Create beautiful, large chocolate shavings by using a cheese cutter on a block of chocolate.
Ingredients:
  • 600ml thickened cream
  • 125ml passionfruit
  • 500g Pavlova
  • 1 mango, stoned, peeled, thinly sliced
  • 1/4 pineapple, peeled, thinly sliced
  • 1 kiwifruit, peeled, thinly sliced
  • 2 passionfruit, extra
  • Small mint leaves, to decorate
  • Shaved white chocolate, to decorate
Instructions:
  • Whip the cream in a large bowl using an electric mixer until stiff peaks form, then gently fold in the passionfruit pulp.
  • - Transfer the pavlova to a serving platter. - Spread the cream mixture over the pavlova. - Arrange mango, pineapple, and kiwifruit on top. - Cut passionfruit in half with a knife and scoop out the pulp into a bowl. - Drizzle the passionfruit pulp over the pavlova. - Garnish with fresh mint leaves and chocolate. - Serve promptly.
