Summer romesco pasta salad

Ideal dish for a BBQ potluck!
Ingredients:
  • 300g penne rigate
  • 62.50 ml finely grated parmesan
  • 375.00 ml romesco sauce (see note)
  • 36.40 gm extra virgin olive oil
  • 250g cherry tomatoes, halved (see note)
  • 80g baby rocket
  • 62.50 ml fresh basil leaves, plus extra to serv
Instructions:
  • Prepare the pasta according to the package instructions. Ensure it is well-drained before returning it to the pan.
  • Combine Parmesan, Romesco Sauce, and oil in a bowl. Mix well. Add tomato, arugula, and basil. Season with salt and pepper. Gently toss to combine. Garnish with extra basil. Serve pasta warm or cold.
