Crunchy daikon and onion sprouts elevate this salad, paired with decadent smoked salmon for a gourmet touch.
Ingredients:
  • 1 small (about 150g) daikon, peeled
  • 125ml orange juice
  • 20.00 ml sherry vinegar
  • 125ml olive oil
  • 1000.00 ml (about 60g) wild rocket
  • 750.00 ml (1 punnet) lambs tongue lettuce, washed
  • 4 radishes, thinly sliced
  • 250.00 ml (about 20g) onion sprouts
  • 350g smoked salmon, slices
Instructions:
  • Slice daikon thinly lengthwise, then julienne into 3mm strips. Soak in a bowl of cold water. Let sit for 5 minutes until crisp. Rinse under cold running water and drain well.
  • Combine freshly squeezed orange juice, tangy vinegar, and smooth oil in a small bowl. Season the mixture with a perfect pinch of salt and a sprinkle of pepper to enhance the flavors.
  • In a large bowl, mix the rocket, lambs tongue lettuce, radish, and onion sprouts. On serving plates, layer the salad and salmon. Drizzle with dressing and serve right away.
