Summer salad with fresh veggies - quick, easy, and light, ideal for lunch or dinner.
Ingredients:
  • 1 yellow squash, diced
  • 1 zucchini, diced
  • 3 green onions, sliced
  • 1 carrot, cubed
  • 0.5 green bell pepper, diced
  • 1 tomato, chopped
  • 0.5 cup fat free ranch dressing
  • ground black pepper to taste
Instructions:
  • Coat vegetables generously with the flavorful dressing, then refrigerate for a minimum of 1 hour. Just before serving, add a sprinkle of salt and freshly ground black pepper to taste. Enjoy!
