Enhance the dish with a variety of vibrant, ripe tomatoes for maximum flavor and visual appeal.
Ingredients:
  • 4 large handfuls mixed tomatoes
  • sea salt
  • freshly ground black pepper
  • extra virgin olive oil
  • good-quality red wine vinegar
  • ½ clove garlic grated
  • 2 teaspoons fresh horseradish grated, or jarred hot horseradish
  • 1 small handful fresh flat-leaf parsley finely sliced
Instructions:
  • Slice the bigger tomatoes about 1cm/½ inch thick and halve the cherry tomatoes. Sprinkle with sea salt generously and let sit in a colander for 30 minutes to enhance their flavor by drawing out excess moisture. Transfer tomatoes to a large bowl and drizzle with around 6 tablespoons of extra virgin olive oil and 1–2 tablespoons of vinegar to your taste. Add garlic and stir in a couple of teaspoons of horseradish, adjusting to preference for heat. Mix in finely sliced flat-leaf parsley and season with pepper. Serve as a delicious salad alongside roast beef, goat's cheese, or jacket potatoes, or roast with sausages for another tasty variation.
