Baked chicken breasts cooked in a flavorful sun-dried tomato and garlic cream sauce, perfect on its own or with pasta or rice.
Ingredients:
  • 8 (6 ounce) skinless, boneless chicken breast halves
  • 1 tablespoon Italian seasoning
  • 0.75 cup sun-dried tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic clove, minced
  • 1 (10 ounce) can cream of chicken soup
  • 0.5 cup milk
Instructions:
  • Preheat oven to 375°F (190°C) for perfect baking results.
  • Season the chicken generously with aromatic Italian seasoning, salt, and pepper. Transfer the seasoned chicken to a baking dish and bake in a preheated oven for approximately 20 minutes.
  • In a small saucepan, bring water to a boil. Add sun-dried tomatoes and cook until soft, 7 to 10 minutes. Drain the tomatoes and blend in a food processor until smooth.
  • In a skillet over medium heat, combine olive oil and butter. Sauté garlic until golden brown, about 3 to 5 minutes. Add cream of chicken soup and milk, stirring well. Season with Italian seasoning, salt, and pepper. Mix in pureed tomato and simmer for 5 minutes. Finally, add baked chicken breasts to the skillet and simmer until fully cooked and juices run clear, around 5 minutes.
