Whip up tasty apple cinnamon muffins with fiber-rich mix for a satisfying treat.
Ingredients:
  • 1 box (15.3 oz) Fiber One™ apple cinnamon muffin mix
  • 1/2 cup canned pumpkin (not pumpkin pie mix) or unsweetened applesauce
  • 1/2 cup water
  • 1 tablespoon canola or vegetable oil
  • 1/4 cup fat-free egg product or 1 egg
  • 1/3 cup raisins
  • 1/3 cup sunflower nuts
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons milk
Instructions:
  • Preheat your oven to 400°F. Grease the bottom of a 13x9-inch pan with cooking spray. In a medium bowl, mix muffin mix, pumpkin, water, oil, and egg until just combined (it's okay if it's slightly lumpy). Gently fold in raisins, then spread the batter in the pan. Top with sunflower nuts before baking.
  • Bake for 20-25 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely for about 1 hour.
  • Combine powdered sugar with just the right amount of milk in a small bowl until you achieve your preferred consistency. Drizzle the glaze over the bars and then cut them into serving portions.
