Delicious apple pie squares with flaky pastry and cinnamon, perfect for any occasion – from coffee breaks to desserts with ice cream. Enjoy fruity sweetness and refreshing coolness in every bite. A versatile treat for summer gatherings or sunny afternoons.
Ingredients:
  • 300g (2 cups) plain flour
  • 40.00 gm caster sugar
  • 185g cold butter, chopped
  • 125ml (1/2 cup) iced water
  • 1 egg, separated
  • 800g can pie apple, drained (see notes)
  • 2 tsp cinnamon sugar
  • 80g (1/2 cup) icing sugar mixture, sifted
  • 20.60 gm milk
Instructions:
  • Combine flour, sugar, and butter in a food processor. Add iced water gradually. Pulse until butter is incorporated into pea-sized lumps and dough starts forming moist clumps.
  • Transfer the dough to a clean surface and shape it into two equal portions. Roll out one portion on a piece of parchment paper to create a 22 x 32cm rectangle. Roll out the second portion on another piece of parchment paper to form an 18 x 28cm rectangle. Place both on a board or tray and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 200C/180C fan forced and grease a 16 x 26cm slice pan. Line the pan with the larger pastry portion, whisk the egg white to loosen, brush over the pastry base, and reserve the rest. Spread the apple over the pastry, then sprinkle with cinnamon sugar.
  • Lay the small piece of pastry on top of the apple. Mix the yolk with the egg white and brush over the pastry. Bake until golden brown, about 40 minutes. Let it cool completely before serving.
  • Combine the icing sugar and milk until smooth to create the glaze. Brush it over the pastry using a pastry brush and let it set for about 30 minutes. Then, serve.
